I would like to release an app only for iPad and later release a different build for both iPhone and iPad.

If you just add iPhone capability, keep only iPad in the destinations:
When you build for simulator, you will see that only iPad simulators are proposed.
Then later, you will add again iPhone as destination and rebuild to publish a new version of the app.
