You can remove the details for your app tracking by updating your "App Privacy" section.
You should see details with blue edit text beside them. If you click one of the blue edit options it will take you to a series of questions about how you or third parties collect data on the user. You can update this form to reflect your correct your apps details.

I'm getting the same issue as of last night. I think/assume that the new update has changed a requirement for submission and our builds are automatically being removed if they don't have some entry in the plist or something, but I have no idea what I am missing... I uploaded to testflight and it says processing... then I check back soon after and it's just gone, like it was never uploaded...
Same issue here, using Unity for my project if that matters for common variables.
It shows up first thing in test flight as status processing... then it disappears after that stage within 30 minutes.
Just started happening in last 24 hours. I assume we are missing something required from the update yesterday and it's auto rejecting our builds when processing but I don't know why....
Edit: Noting that my machine is also a mac mini M1
experiencing the same thing here... Did you happen to have an M1 Mac Mini you are submitting with?
