I'm encountering a frustrating issue where my App Store Preview video has been stuck in the "This file has been uploaded and is processing" stage for more than 72 hours.

Hello :) I don’t have a solution for that but I had the exact same issue. It uploaded after I deleted the previews and tried it again but I think you might have already tried that.
