XCode iOS Deployment target set to 10 but on TestFlight, the build says "Requires Latest iOS" on an iOS 10 device

Hi, This is the issue i am currently facing:

I have an iOS project where I've set the iOS Deployment set to 10 but when I archived and uploaded the build on to TestFlight, the build says "Requires Latest iOS" on an iOS 10 device

Looking at the app metadata, it says the mininum iOS version required is iOS 11

My last successful upload to support iOS 10 is on 11 August 2021, ever since then I have only added bugfixes and no XCode project changes that should affect the deployment target.

I am currently using XCode 12.5.1
