Would Apple take a 30% fee from this model?

If we built a subscription service app whereby we mail you a box of stuff you want to store and you mail it back to us. You can request to have it mailed back to you at any time. You pay a monthly fee to belong to the subscription.

We're considering whether or not to build a mobile or web app. If we go the mobile route we'd want to integrate Stripe to avoid Apple's 30% revenue share. It's unclear whether they'd reject that and try to take a cut or not. They say physical services do not apply, but subscriptions do, so this is in a gray area it seems. Does anyone have any idea whether they'd let us do this without taking a cut?

Thank you!
Assuming that the decision to retrieve certain stored files is made within the app and further that within the app you select which files to retrieve then you are 'unlocking code' within the app and must use IAP.

The fact that you do it by a 'subscription' doesn't matter. You are having the user pay to unlock code within an app - that's IAP.
