I have the same situation as you only in the installation phase.
It reaches 28 minutes after which it freezes and does not continue..
I don't know if it's an Apple problem or a problem with my Macbook Air M1 but I'm heartened by the fact that there are other people with the same problem as me.

don't worry I solved it in the end.
The problem was the hub which unfortunately was unable to provide enough power to make the external disk work correctly.
I opted for a docking station...and a 65W power supply from Apple and it seems to work fine.
What is supplied, if I remember correctly 30W, is not enough for the Macbook Air m1.
After several attempts I managed to install Beta 2 of Sequoia.
For the benefit of everyone.
I downloaded via the "softwareupdate" command, I downloaded version 15.0
MacBook Air Shutdown.
Booting in "Safe boot" mode.
Installing the Beta version
