I seem to have trapped my MacBook Pro into recovery mode. I converted my Macintosh HD to the APFS and it will not let me boot it up anymore. Is there a way I can go back and undo the APFS changes? Is there a way to create a new disk that does not have APFS?

Ouch. It's a one way conversion. I'd make an external boot SSD if I were you and use that for tests. Also wipe your internal and restore the back up you made for 10.12, you did make one right?
