Handoff Not working between iPhone XS and MacBook Pro Big Sur, it was working fair in Release Candidate and betas, but it does not work properly in Final version.

Good thing is Airdrop seems to be working fine rather than few users have airdrop issues too.

Noted in another forum that - if you open bluetooth and "pair" your phone to your computer - this may not be a 100% full-time solution, as the bluetooth can drop out - but has solved the issue to allow handoff to work when phone is paired.

Q
