After upgrading to 11.1, Google Drive Stream no longer loads. Requires approval for system extension but it doesn't show up, allowing access.

I'm using MacOS 11.1 beta, have this problem, too.

I try to exit Drive File Stream, then run in terminal:
sudo kextload "/Applications/Google Drive File Stream.app/Contents/MacOS/dfsfuse.kext"

Try to restart Drive File Stream, it's work for me.
