Can't add new iOS versions on ASC. Max of 2?

I would like like to update my live application, so I need to create a new version (1.0.4), but I currently have a pending version (2.0) for the iOS14 work I'm doing.

Is it possible to add a new version while 1.0.3 is "For Sale", and 2.0 is "pending submission"? I do not have the + button next to the "iOS Apps" header.
No, the store mandates incremental adds - no going backwards. There's no way you can wedge 1.0.4 in there. You'll need to either replace the pending 2.0 with another build, staying at 2.0, or bump past 2.0 with yet another build.
 Well I suppose I can remove my 2.0 to create 1.0.4, but I do not see an option to do so. It's been submitted for test-flight testing, but it's not something that's live on the store.

I suppose I can remove my 2.0 to create 1.0.4

No, either I'm not clear or you're not listening, again, you can't. You're past that and obligated to the last version number, 2.0, that the backend has already gulped down. Deal with it, don't fight it.
