Hi, my iPhone is on iOS 14 beta and my watch is on watchOS 7 beta, if I restored my iPhone back to iOS 13.5.1, would my Apple Watch still work?

No. Just ran into this as well. DJI apps were crashing with newest iOS 14 build, so I had to revert to iOS 13. Now I can not connect my watch (watchOS 7).

An Apple Watch on watchOS 7 beta will only connect with an iPhone on iOS 14 beta. If you revert your iPhone to iOS 13.5.1 and don’t plan on reinstalling iOS 14 beta on your iPhone you’ll have to send your Apple Watch to Apple to have it reverted to the latest public release of watchOS 6.
