Looks like it’s still broken. I’m experiencing the same issue (watchOS 10.6) with Bontrager (Trek) DuoTrap S cadence and speed sensor. It pairs properly with my Apple Watch, cadence live value is properly presented during workout session as well as in Health app after the session. Speed value from the sensor is never read/used.
I’m sure the sensor is broadcasting both values (cadence and speed) properly as I can read it live using third party app like Wahoo.
I which, Apple fix this as speed value from this kind of sensors are way more reliable than GPS based 😞

Hi, I faced same issue last time. Solution in my case was switch "All" into "Recent" in build summary view. Hope this helps you too.
