Yes I was getting this on multiple simulators. Deleting the app and trying again will always work since it's the migration that was failing. Also deleting the app removes all historical data that needs to be migrated.
Since Apple's "code-level support" is complete BS I've started over, probably will have to rethink certain features because I can't lose user's data.
Really, my biggest lesson learned here is SwiftData shouldn't even offer unversioned schemas.
