I have experienced this more than once and discussed with support.
Your best option is to take the same build, bump up the version number and resubmit if you don't see dsyms in a reasonable amount of time (maybe 15-20 minutes) after processing of the upload completes.
For whatever reason, the processing did not complete, and Apple apparently no longer has the file to try and reprocess.
