Ok, I figured out why I was seeing a different value to my boss under 'Price Schedule'. My profile's preferred currency in App Store Connect was set to United States. HOWEVER, the price I get in the actual App is still incorrect. I get the correct price locale (GBP £), but the wrong value. I should see £9.99 in the app but I see £11.99.

Strangely, my boss (who added the in-app purchase to the store) is seeing a different value in App Store Connect to me. He sees £9.99 under 'Price Schedule' but when I log into App Store Connect, I see $11.99 under 'Price Schedule'.
In the app, it displays £11.99. I'm thoroughly confused because the currency symbol it returns is correct (£) but the value is incorrect.
If that's the case, why does the priceLocale return the US value instead of the GBP value? Under Localizable Information in App Store Connect, English (U.K.) is set. Also, the Apple ID I'm using to test it is from the United Kingdom.
