I want to know if a server to server notification will be triggered for consumable products on cancellation. Or it is only for auto renew subscription?
And if it will trigger notification for consumable products, then I can revert the coins in my game that a user purched.
Notifications are only for autorenewable subscriptions.
The app store rarely agrees to a cancellation of a consumable IAP.

Yes, notifications are only associated w/autorenewable subscriptions, and, cancellations/refunds are usually only given out for auto-renewable subscription, non-consumable and non-renewing subscription products.
