Weatherkit service works at some places and doesnt work other places. I have tried via vpn and I can see still working at USA but not working some part of europe
Dns issue
I am experiencing network-related issues over the past few days as well. Requests are intermittently failing. I don’t have many details at the moment but I will dig into this and provide an update.
I’m contacting the WeatherKit service from the western USA.
For me the same issue. I wrote Apple Developer support.
Same problem here: seems to work fine in Belgium, but returns internal server errors in Germany.
It's at least partly a DNS / load balancer issue: by replacing the resolved IP address with the one from a working/failing region we can make it work/fail.

I believe we have been affected with the same issue since August 14th.
When domain weatherkit.apple.com resolves to an IP-address like 95.101.75.* requests fail with error HTTP 500 (and consistently hang for about 5 seconds until a response is actually returned). Unfortunately, network infrastructure here resolves to this IP-pool for maybe more than 90% of the attempts.
When domain weatherkit.apple.com resolves to an IP-address like 173.222.107.* requests complete successfully (HTTP 200).
Is there a quickfix? Does it make sense to use fixed ip?

As I observed the issue is not stable sometimes works sometimes doesn't work. I added a web service which has stable connection server with weatherkit for a solution.
I contacted with apple developer support team I sent all headers data with unsuccessfull request and other details also I created a video that shows making api request with postman with all details. I can't understand why they still asking questions.
