Answer is No. You will need a Mac to run Xcode.

You cannot run macOS apps on visionOS. However, you could run Xcode on your Mac and display your Mac's screen contents on Vision Pro.
Don't get rid of your MBP yet
You can use xCode in Remote Desktop from your Mac on Vision Pro and it works pretty well [ with some annoyances like every time you launch an app it gets placed randomly in your environment rather than being pinned where you want it ]
Xcode has never run on iOS or by extension Vision Pro. You lose the Xcode connect once in immersive mode. So if stuck at a breakpoint, then you don't know about it. And the display isn't high enough res to read the laptop, but the virtual display is sided up enough that it works.
