I am trying to migrate DarkSky to WeatherKit and found that there are quite a few weather attributes which was present in the DarkSky's dailyForeCast API is not there in the WeatherKit REST API. For example maxTemperatureTime and minTemperatureTime. Is there any workaround to fetch these attributes? Are you going to include these attributes in the future in the foreCastDaily API?

Nobody on this forum can answer questions like that. Your best bet is to file a Feedback with your requested enhancement.
I would not plan for them to support that. The getting started docs have a whole section related to transitioning from Dark Sky and many fields simply say "none" meaning there is no equivalent and it is not supported.
