When adding a Discover card to Apple Wallet, I use PANs from the 'Test Cards for Point of Sale Systems' section on https://developer.apple.com/apple-pay/sandbox-testing/. The card is provisioned, but with an expiration date of 01/21, meaning the card is expired from the start.
