When we activate AppProxyProvider to proxy traffic, Youtube streaming is not working. But at the same time Google chrome seems to be working. We also verified this with some Apple services and below services also seems to be not working:
1) Apple Safari - Not working
2) Apple Mail- Not working
3) Apple Maps- Not working (showing connection issue)
4) App Store- Not working
5) some more might not be working with Approxy enabled, we have not verified all of them
Issues are not seen when we disable AppProxyProvider.

Please test this in Big Sur Beta 10 or in Beta 11.0.1 as many fixes landed for these exact scenarios you are describing. I myself have tested the Safari and Mail issues and see favorable results.
Also, in Big Sur Beta 10 there is a new provider called NETransparentProxyProvider that does improve the usage and flexibility proxying flows either in your provider or letting the system handle the flow as usual.
