how can i install mac os x catalina(10.15) on big sur beta(11)?

i install mac os x catalina(10.15) at my big sur beta(11) installed macbook pro Late 2019 and when i install there's error written like
"The mac os X catalina installer is too old to run"
and unable to undo the update at big sur beta(11) to catalina
how can i install catalina on big sur beta? (and i can't use 3 finger and up and see desktops)
