If I try to upload my Catalyst app to the App Store, I get an "unsupported content" error. I am trying to determine whether this means "the App Store has not yet been updated for Catalyst even in beta form" or "you have actual unsupported content of some kind and I'm not going to tell you what it is."
Has anyone else tried to upload and had a build processed?

Assuming you meant TestFlight, not for distribution. Devs are not allowed to push store dist builds using beta tools/IDEs.
If it was a just tools issue, I'd expect the backend to warn accordingly via 'Invalid Toolchain'. I think devs are still seeing that with this round of betas.
'unsupported content' is a new one on me, but I'd guess it's just boiler plate for something unrelated to the tools that isn't on the whitelist proper. I'm going w/catalyst.
