I have installed Catalina, I now have some programs that do not run on Catalina. The provider of a program, informs me that it's not their problem. is there a possibility - on line - of returning to Mojave?
or do the developers have a new version of Catalina that is able to use all the programs?

Are these applications 32bit? If so, unless the developers update the application, it will not run in 10.15.
As mentioned when Mojave was released, 32bit was going to be depreciated.
To restore mojave, just erase the disk and restore from backup. That's easy enough.
For the app, you'll have to ask the developers if they have a new version.
For other previous betas, that was possible and easy enough, but Catalina is not letting me restore from backups, now it just enters into internet recovery mode. Internet recovery mode is not working either, boot disk with Mojave is not working, boot disk with Catalina to at least reinstall it, is not working. It is a nightmare.
