All the San Francisco fonts are trademarks of Apple, and they do protect the font very well. Microsoft likely uses a -system-mono font in their CSS, so it will display the Segoe fonts on Windows, Cantarell on Linux, and SF on Mac. However, SF Mono is a slightly modified version of Menlo, which is a slightly modified version of DejaVu Mono, which is FOSS. Note that software using FOSS components must also be FOSS.
The way I see it, the App Store is really really good for indie apps and startups, while the Play Store promotes junk and very not unique apps. But if you need to reach users quickly and have a more technical app or a game, the Play Store is great. It lets users get a demo of your app, (yes, I know App Clips exist,) and it also includes version channels.
