My company (fintech) is in the same quandary. I'm about to go to https://developer.apple.com/contact/app-store, click "suggest a guideline change", and detail to Apple that we can only offer users a way to initiate the closure process in our app; full compliance with 5.1.1 (v) would be a massive security risk and an open invitation to fraudsters. I encourage everyone to do the same; the more Apple hears about this, the more likely it is they'll fix the requirement. I'll post back here if I get any response from them.
