That didn't work. But I did set most of them to 'Never'. Then I deleted the simulators I wanted to use, e.g. iPhone 15 Pro & iPhone 13 mini, recreated them and set them to 'Always'. That's when they showed up in the project simulator list. A fairly easy workaround.
