We didn't changed anything in meta data. That info was setup a few years back and never touched it again. 'Don't try to fix a running system'.

Not an option to select as default, but you can remove all devices you don't need from the list by going to:
Select device > Add additional devices, and uncheck 'Show as run destination'. As I'm a beginner and only focussing on learning stuff I'm simply only using the iPhone 12 mini so it will be selected as default when starting a new project.
