I had the same problem with Xcode12beta_3.xip. Basically, you just need to play around with it. Free up some space, turn off Time Machine's Back Up Automatically option, restart your Mac, move the XIP file from the Downloads folder to another folder, and then back to the Downloads folder, and then expand it.

No. It is not possible to have the two versions side-by-side. When you run the SF Symbols 2 installer, you can see in the introduction section that
Important Notice
Installing this beta software will replace any existing installation of the SF Symbols application, SF Pro and SF Compact font families. To restore the ability to work with the release edition of SF Symbols, please reinstall using the SF Symbols installer. But I don't think there would be any problems with this. You can still see which symbols are only available on iOS 14 and later, and which ones are available on iOS 13 and later.
