Hello, if you type your handwriting in Notes, than, you will be able to select it and copy it as text. I've just done it.

Hello, it might be due to local timemachine backups.
you can control in the console whether or not they are backup with the command : tmutil listlocalsnapshots
To delete a snapshot, you can use : tmutil deletelocalsnapshots snapshotname
