I hadn't experienced it until Beta 4. Now it happens. Most of the time restarting my iPhone will correct it, but not always.

My app is on the watch, but if you have iOS 14.2 there is a problem because Blood Oxygen is missing from the Health app. I tested a new Series 6 on an iPhone with iOS 14 18A343 and it worked fine, even asked me to set up during pairing. I was having issues with the dev iPhone so I upgraded it to iOS 14.2 and no joy. Also noticed the new Memoji, Stripes, and Artist watch faces were also removed. Hoping they get restored in the next 14.2 beta release.
What version of iOS is installed on your phone?
When I pair my watch with an iPhone running the release of iOS 14 it works, but if I pair with an iPhone running 14.2 beta it's gone.
Fixed in latest beta.
UPDATE: This issue persists in the current 14.1 RC. I do use Feedback Assistant and share sysdiagnose info with Apple.
The affected system is a 2022 Mac Studio M1 Ultra 128GB, 4 TB SSD. The installation of macOS 14 is clean, not an upgrade. When macOS 14 was released, the Mac was erased, and the official release version of macOS 14 was installed. All software was reloaded, not restored from a Time Machine or other backup.
This issue continues in the 14.2 beta 3 release as well.
If this Mac Studio is used for more than a few minutes, it will panic when it is shut down and immediately reboot. This has continued since 14.1. I've done a clean install of the OS and reinstalled all apps from downloads from other developer's sites.
After several weeks, it appears this panic is related to ChronoSync. On days when the MacStudio runs a Chronosync scheduled tasks, it will panic at shutdown. I blocked all scheduled CS tasks for two weeks, and the system never panicked. I've run two CS sync tasks manually, and each time, the MacStudio panicked at shutdown. I have reached out to the developer.
