How do you uninstall the latest update? 11.1

My iphone 6 plus screen is flashing from top to bottom locking up my screen and it started after I installed the latest updateand don't know what to do. Verizon told me go on itunes and uninstall the last update. Apple said I couldn't uninstall the last update. I'm to the point maybe I should get a new phone.
