What is the compatibility between different versions of Unity and XCode?
I currently have Unity version 5.1.2f1 Personal. What version of XCode works with this? When I use XCode 7.1 Beta, I always get some weird "linking" error and 698 warnings, so that's definitely NOT working!

That's a question for the Unity folks.
Apple doesn't maintain compatitibility between Xcode and third-party products.
That's the responsibility of the third-parties.
I would recommend to stay at Xcode 6.4 Knowing that 7.0 beta still has some.....minor problems.
But if you're using Unity 5.0.3 - 5.2.0 I would keep myself at Xcode 6.4
Sadly With the release of IOS 9 we'll have to change to 7.0 Around the 30th of september
