Is it safe to delete archives from the finder? That is, from ~/Library/Developer/Xcode/Archives?
I have a lot of them, and it's tedious to remove them from Xcode because you can only do it one at a time, and there is a confirmation prompt.
I also have a number of empty directories that correspond to old projects I no longer maintain. I can't find any way to delete these from within Xcode at all.

I'd delete via the Finder, yes. I'd do that, and empty the trash, w/Xcode closed, just to be safe on that level.
Try the empty dirs first, then see if your Xcode complains about it going away, but I don't believe there is any issue, it's not like separate resources are in play.
I do think they come in handy if you need to debug crashes later, tho. I just keep them -and- back them up.
