When I try to update Xcode to version 11, I a get a message: "There is not enough disk space to update to install the product".
I have 40 free gigabytes on my disk, how much space is needed?

40 is not enoughh.
You should have at least 60 or even 80.
See this recent thread (and note there are others like it):Not enough disk space to install Xcode?
And while I agree 40 GB is thin ice & you should not only clean off tens of GB more regardless, you might also want to just bypass the MAS, grabbing Xcode here, More, then do a manual install.
