Does anybody know how to re-pair a watch with Xcode if you’ve anciently unpaired it?

Thanks

If I remember well, you pair with the iPhone which is itself paired with Xcode.

They propose the Fix steps

Fix steps :
Unpair my watch
Reboot both iPhone and apple watch
Pair them again, and setup my watch as a new one
Plug (unplug first) iPhone to Mac
On apple watch, say Trust the computer when it asks
Unplug and plug again
Close and open XCode
Open the project and wait a few seconds

Clear Trusted Computers from the iPhone Settings > Developer and reconnecting the iPhone again in Xcode solved my problem. I have also cleared the cache from ~/Users/username/Library/Developer/Xcode/.
