Safari 14.5 Beta - Outbound WebRTC Stream Fails

When using an iPhone X running Safari 14.5 Beta and performing an outbound webRTC stream using a web app (such as this openVidu demo: demos.openvidu.io/openvidu-call/#/), the outgoing video is fine until 5-10 seconds into the stream when the outgoing screen turns black and it seems access to the camera is lost.

Is anyone else experiencing this behaviour?
I see something similar in our application where we have WKWebview on an AWS Chime WebRTC meeting. For devices running 14.3+, they transmit video, but it's blank for themselves. And then when another video comes online, the entire meeting flickers. The original phone also will start to be excluded from meeting events and audio/video transmission over time.
