Hi all,
It was more than 1 month that I had posted my question and I had not any reply.
Luckily, I came across this company, epomaker, that manufactures computer keyboards and I have actually found
a pretty decent one. The keyboard model is the GK96LS (southpaw).
I have ordered it and when it arrives I will update this post with my feedback.

Hi all again,
I received today my epomaker GK96LS keyboard and I am very satisfied with it.
Very fast delivery and really good quality.
The only thing I might say is that the keys sound like the old style Mac keyboard. They "click" when you type,
but if this does not bother you much than this keyboard is a good choice for left handed users.
I hope I gave you guys something to think about.

I finally got it working earlier today by downloading the Big Sur installer software and installing it on the SSD.
I ran the Terminal command "softwareupdate --fetch-full-installer" and after it completed it asked me where I wanted to install it.
I chose my external SSD Drive and at the end I could finally see under "System Preferences" , "Startup Disk" both options:
My Mac Mini HD and the External SSD. By selecting the SSD as a boot option, everything worked great!
I hope this might be helpful to others having the same issue with mine.

Thank you for your reply. Yes, it is unfortunate. I did some research before posting my question because I was not sure if I am missing something. I guess Apple is promoting SwiftUI for WatchOS development. I just have to comply :(
