Mine was stuck at 2minutes mark for a very very long time (3hrs+) I finally looked at the log (you can open logs window from one of the options on top menu) The log showed that some verification wasn't done, and one of the file named InstallESDDmg.pkg was failing to download repeatedly. I just kept retrying, after several retries, it worked on its own. Whenever it failed downloading, it used to show the following error message: The operation couldn't be completed (PKDownloadError error 8.) Alternatively, I gather from other internet boards that you can attempt to create a startup disk on a pendrive and try installing via that. But I'd say, just retry at different times, it resolves on its own. I think it just fails because of the load on server whenever there is a new version of MacOS released & everyone's trying to update their system.
