I can't find "Media" anywhere in the details sidebar. (I am not very familiar with the Web Inspector in Safari)
However, right clicking the video and clicking "Show Media Stats" states the color as bt709, which does match my input settings.
At every point of exporting/converting my video files, the colorspace was always set to Rec. 709.
