MacOS Big Sur Lagging
FWIW
My Mac 27" 2019 was running fine till I installed Big Sur, then it ran like a dog.
I followed one of the posts here relating to SMC (I neither know nor care what that is!) and shut down, unplugged, waited 15 seconds, re-started.
Problem fixed.
