Thanks! I ended up doing a full restore with a Mac and the iPad in recovery mode. Then set it up with an iCloud backup. Seems to work for me and so far I haven’t encounter any new problems.
Yes I find it so hard to believe that this sort of thing would happen with Apple. And while all of us in this thread had the exact same issue I have found almost no post/info anywhere else regarding this. Strange.
